FORE Systems has two ATM PCI cards, { 200Mbit, 25Mbit }, suitable for Octane

they come with RJ45, so I wonder, if one got two of those, how should he/she wire up a cable (CAT5?) between them

without a switch, you can use a crossed-over stp or cat5 cable.
